In my line of work I take special care to use the fruit right after harvest so to ensure the charms of the fruit are not lost. In almost every case they are fruits that have been harvested directly where they have been grown.
In the case of the fruits and vegetables used for the making of marmalades and jams a great incentive is generated for small producers and/or people of low resources, which are stimulated to work the land to be able to get their bread of every day.
My solitary action quota is within the education of the people of lower resources, by teaching them to grow and use their resources in the feeding of their families and by acquiring the goods directly from them, as to eliminate intermediaries.
By getting involved more every day with the producer and with the tropical fruits we encountered the reality of giving fruits like the passion fruit and the pineapple, mango and key lime more value.
This is how it is born:

Passion fruit based sauce, of South American origin, rich in vitamins A and C. With its exotic touch its ideal to serve on ice creams, desserts and to prepare cocktails such as M-burucuya sour.
Even if chutneys are known as a condiment from India, its concept has reached out in the world, and it mutated to be able to adapt to the local needs, something that happens with most foods. The term “chutney” comes from the East Indian word “chatni”, which means “very spiced” and it is described as condiment that is usually made of a mix of diced fruit, vinegar, spices and sugar. All cooked until a paste with small fruit chunks is obtained. The majority of chutneys are spicy, but it’s easy to adjust the spiciness to mild it.
The terms chutney and relish are commonly used referring to a condiment. The mix-up is understandable. Chutneys may be salty and the relish may be sweet. In general, chutneys have the consistency of a smear able paste with small chunks in it, very similar to marmalades, while relish are barely cooked, they use less or no sugar at all, and feel crunchier when eaten. Thousands of ingredient combinations exist. The majority of chutneys contain a fruit base, but other non-sweet vegetables can also be used. When the basic concept is understood one can experiment with any type of fruit and/or vegetable. In our case firm, not fully ripe, fruits are used. Some cases are mangos, bananas, peaches, apples, pineapples and green damask. Green tomatoes and pumpkin are also good candidates. Ripe fruit with delicate flavors like blueberry and others are reduced to a softer marmalade, after cooking. And give a special touch to any well intentioned dish. Dry fruits go great with chutneys, as they retain their texture and, at the same time, produce a sour taste, which is well compensated with sugar and spices.

HOT MANGO CHUTNEY
Made with chunks of mango and generous bits of spicy red chili. Mix with grilled chicken for a low-fat chicken salad, or serve with cheddar and cucumbers on pita bread.
DRIED TOMATO CHUTNEY
Can be served with pork, meat or grilled chicken or with curry dishes.
HAWAIIAN MANGO CHUTNEY
An excellent combination of fresh mangos, juicy apples, ginger, blonde raisins chili and spices. All adds up to accompany salmon or your favorite dish.
This fabulous seasoning is perfect to smear on a sandwich and also delicious served on Brie, Camembert or cream cheese, and an entrée.
This exquisite chutney is ideal with practically any type of meat. It is even a great combination with grilled salmon.
